Meals on the go – that’s the name of the game during spring planting and fall harvest. This year, I’ve been trying to get a bit more creative. I mean, you can only eat so many cold cut sandwiches…
Here are a few ideas for field meals this spring:
Walking Tacos | Picky Palate has an awesome step-by-step recipe to follow. I use a veggie tray – like one you’d take to a family gathering – to carry the fixin’s if you’re doing a tailgate pit spot. For those on the go, just give it to me so I can keep planting moments, I opt for a ready made version to deliver.
Meatballs | If you don’t know already, meatballs are a go-to favorite around these parts. I put together a quick recipe on Farmer Ryan’s Favorite Meatballs…which honestly, are like mini meatloaf. They are PERFECT for freezing or making a big batch that you can throw in a crockpot and haul out to the field. And as a bonus, they are easy to eat while driving a tractor.
Patty Melts | If I could write a love song about a sandwich, it would be to the Pioneer Woman’s patty melt. Seriously. This recipe is easy, comes together fast, sticks to your ribs and travels well. It’s a great choice if you have beef in the freezer, too!
